SpeedLine User of the Month: Piecasso’s Pizzeria & Lounge


After recently being named one of the best pizza spots in Vermont by Best Things Vermont, SpeedLine user Piecasso’s Pizzeria & Lounge in Stowe, VT was an easy choice for user of the month. For generations, the Rovetto family has been slinging delicious pizzas, and with some recent media coverage, they’re excited at the recognition of their flare for the unique in decor, ambiance, and menu.

An interview with Eduardo Rovetto, owner, Piecasso’s Pizzeria & Lounge.

SpeedLine User of the Month: Piecasso’s Pizzeria & LoungeTell me a little bit about your restaurant. We run a single unit here in Stowe, VT that’s about  7,000 sq ft. We started with about 800 sq ft back in 2000, with 4 tables and only about 15 seats! We were primarily carryout back then, but in 2006 we moved to this location and haven’t looked back. It’s taken lots of years, but we renovated as we went along, and my vision of a dream pizzeria became a reality only a few years ago.

Now we have a full-service bar, seating for 155, 12 craft beers on tap, a games room for kids, and an extensive menu that was featured in Travel & Leisure.

You also play a large part in Rovetto Brothers International with your cousins. Tell us about that. Myself and my cousins Giovanni, Iginio, Carlo, and Eduardo all own at least one pizzeria ourselves, and we have joined forces to increase our buying power. It’s really helped us both financially and operationally to keep an eye on our food costing, labor controls, and inventory collectively. Our SpeedLine POS plays a major role in that.

SpeedLine User of the Month: Piecasso’s Pizzeria & LoungeWhat’s your personal favorite slice? The Vienna. It’s a pesto base pie with fresh spinach, Kalamata olives, sun-dried tomatoes, and fresh mozzarella with a balsamic drizzle.

How has SpeedLine helped your business? Labor forecasting for one. We’ve saved a ton of money by being able to look back at previous years and forecast future needs. It’s helped us maintain a 28% food cost, and saved us tens of thousands of dollars. SpeedLine definitely played a large part in being able to grow like we did. I’m guessing the system paid for itself in 6 or 7 months.
